This wine associates its quality with the name of the Carthusian monks, who since 1587 have led a solitary life of prayer in the Convent of Santa Maria Scala Coeli, in Évora. It was first produced in 1986. Vinification of Cartuxa DOC White Wine 2021: when the grapes reach the ideal state of maturation, they are harvested and transported to the winery, where the technological process begins with total stemming and slight crushing, pressing, cooling and must clarification. Fermentation takes place in stainless steel vats at a controlled temperature of 16ºC. It is then aged on fine lees for 8 months with regular batonnage.
