Vinification of the Castello D´Alba Moscatel Galego White Wine 2020: Manual harvesting into small 20 kg perforated boxes, gentle pressing of the entire bunches without stemming, in order to preserve the integrity of the grapes as much as possible, natural fermentation with indigenous yeasts at a controlled temperature between 16 – 18 ºC in order to obtain the maximum expression of the grape variety / soil / climate combination. After alcoholic fermentation, the wine was in contact with the fine lees, which were lifted and stirred for around a month in a stainless steel tank in order to gain creaminess and volume in the mouth. After bottling, the wine aged for 3 months in the bottle before being released on the market in March 2020.
