Vinification of Ruinart Rosé Brut Champagne: Hand harvested. Fermentation takes place in stainless steel tanks with regulated temperatures. For red wine, short maceration and light extraction. Complete malolactic fermentation. Composition: Blend made with a base of Chardonnay and Pinot Noir, mostly classified as Premiers Crus with 20/25% coming from reserves from the previous 2 years. 45% Chardonnay, Côte des Blancs and Montagne de Reims vineyards, 55% of Pinot Noir comes from Montagne de Reims and Vallée de la Marne Vineyards, of which 18 to 19% was made red wine.
