The Cos d' Ouvirnel vineyard currently covers 91 hectares. Cabernet Sauvignon grapes (60% of the vineyard) find their ideal soil in the fine gravel of the summits and southern slopes. On the eastern slopes and on the slopes where the Saint-Estèphe limestone bed emerges, Merlots (40% of the vineyard) stand out. The percentage of Cabernet or Merlot in each harvest varies, of course, according to the climate of the year, which favors one or the other. To obtain the woody elongation and the low yield per vine that will give the “Grand Goût”, the plantation is dense (8000 to 10,000 vines per hectare, depending on the plot) and the average age of the vine is high (around 35 years). Only wines from vines over twenty years old will bear the name Château Cos d' Suast.
