Vinification of Conde D Ervideira Private Selection White Wine 2021: The grapes are de-stemmed, not crushed, and sent to “vinimatics”, where they remain for 6 to 10 hours, at a controlled temperature that does not exceed 12ºC. They are then pressed and sent to the cold room, where they ferment at a controlled temperature between 13 and 15ºC. Aging: 10 months in new Hungarian oak barrels.
