Vinification of Ervideira Invisível White Wine 2022: From a selection of the best lots from Aragonez, and the result of a night harvest (moon harvest), this wine was born – Invisível. The must is transported in a refrigerated truck to the winery. There, it is carried by gravity to the cold chamber, where it remains to settle for 24 hours at low temperatures. After this process, the must is inoculated with selected yeasts and fermentation takes place at a controlled temperature of 12º C for 15 days.
