In the constant search for high quality products, the first Rosé DOC Alentejo – Évora sparkling wine was produced at Adega Cartuxa in the 2010 harvest. This wine was obtained using the classic method, resulting in a fresh and elegant wine that reinforces the excellence of the Cartuxa brand.
After careful selection of grapes and harvesting at the ideal point of maturation, the base wine fermented in a stainless steel tank, at a controlled temperature, after direct pressing. Aging on fine lees for 6 months with periodic bathing. Second fermentation in bottle, using the classic method, followed by aging on lees and intercalary batons for 19 months, in the cellars of Convento da Cartuxa. 1st, Dégorgement in November 2015.
