To highlight the character of the terroir, this wine comes from a vineyard called Vinha Formal. Located on a small east-facing slope, in Óis do Bairro, it is in the heart of the white wine map of Bairrada, as delimited by António Augusto Aguiar in 1866, in the "Memory on Winemaking Processes". In this vineyard, the first harvest for sparkling wine is made between mid and late August, to obtain high levels of acidity, ideal for sparkling wine; the second harvest is made two weeks later, to produce white wine.
