Vinification of Marques de Borba Vinhas Velhas White Wine: the grapes are harvested manually early in the morning, into small boxes, to preserve freshness. The grapes are cooled in a cold room before being vinified. Fermentation takes place in stainless steel tanks with temperature control. After 1/3 of alcoholic fermentation, the must is transferred to new and used barrels where fermentation is completed.
