Vinification of Quinta de Fafide Reserva White Wine 2021: Manual harvesting into small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with a controlled temperature of around 16ºC, using very gentle crushing and pressing processes under an inert atmosphere in order to preserve the full aromatic potential of the grapes. Part of the wine ferments in French oak wood and remains there after a short racking on fine lees with periodic stirring "battonage" until the final batch is made with the wine in stainless steel tanks.
