Quinta dos Carvalhais is the wine brand specialized in producing the best and tastiest Dão wines, becoming the biggest reference in the region. Quinta dos Carvalhais White Special is a wine with no harvest year that confirms Dão's excellence in the production of great whites and the aging potential that characterizes the region's wines. The grapes from the varieties intended for this wine were received at the winery in small 20 kg boxes, being unloaded directly into the pneumatic press. The musts, duly protected from oxidation through the use of inert gases, were subjected to static decantation at low temperature for a period of 24 hours. They were then sent to temperature-controlled stainless steel tanks, where fermentation took place for around 20 days at controlled temperatures. In this wine, an attempt was made to recover old habits from Dão in the aging of white wines, in which it was common to age for long periods in old oak barrels, thus going through varied environmental conditions throughout the year.
