Vinification of Quintas de Melgaço Reserve Brut Sparkling Wine: Gentle pressing and cold decantation for 12 to 36 hours at a controlled temperature between 12ºC-16ºC. Fermentation for up to 15 days with temperature control between 16ºC-18ºC. Yeast and a tirage liqueur are added to this fine and aromatic base wine, fermenting in the bottle for 12 months at a controlled temperature between 10ºC-12ºC. Aging in stainless steel vats with controlled temperature and regular removal of lees for 3 to 6 months. Fermentation for 12 months in bottle before disgorgement.
