Moscatel Favaios 10 Years is a blended wine in which only the best Moscatel harvests are used. In years when nature allows conditions for the Moscatel variety to express itself in all its splendor, some fermentations are carried out with a careful selection of grapes. Fermentation lasts around three days with intense skin maceration and a controlled temperature of 15-16°C. The wine brandy is then added to the grapes and must, interrupting fermentation to obtain a wine with a high alcohol content and residual sugar. Maceration in the presence of spirit continues for another 5-6 days, always at low temperature. After pressing, the wine begins an aging process in wooden vats for several years, improving the integration of the spirit with the wine and improving its bouquet. During aging in wood, the wines that will make up the Favaios 10 Years batch are chosen, mixing older harvests with younger ones, making the wine richer, more intense and complex.
