This sparkling wine remains in the cellar for 60 long months at a constant temperature of 12ºC. The Sauvignon Blanc shows subtle notes of green apple from the Vinha do Bárrio in Mogofores. The berry from Quinta do Amaro in Outeiro de Baixo highlights the potential of the Bairrada terroir for this variety with its delicate acidity and magnificent earthy notes that give it its origin. The degorgement glacée of the Sparkling São Domingos Elpidio Cuvée Brut releases the yeast and then 3.70 g/L of expedition liqueur was added to finish the wine. After a period of two months after this entire process, the bottle of sparkling wine is ready to enter the market.
