Pinot Noir is harvested from Vinha do Bárrio in Mogofores, which gives this sparkling wine its robustness and Chardonnay harvested from Vinha das Andorinhas in Pedreira de Vilarinho shows its main attributes, perfume and creaminess. The degorgement glacée of the Sparkling São Domingos Elpidio Velha Reserva Brut releases the yeast and then 4.60 g/L of expedition liqueur is added to finish the wine. After a period of two months after this entire process, the bottle of sparkling wine is ready to enter the market.
