Vinification of Dona Ermelinda Freitas Rose Brut Sparkling Wine: Light fermentation in stainless steel vats with a controlled temperature at 16- 18º C. Second fermentation carried out in bottle according to the champagne method, followed by a minimum aging period of 9 months in bottle.
