Aguardente Bagaceira Velha Alvarinho Quinta de Soalheiro appeared in 1999, with the launch of the 1st series of 1428 numbered bottles. Since the first harvest, the production of this brandy has been subject to distillation of the best Alvarinho pomace, aging over the years in oak casks, from which it extracts the color and structure that complete the intense aroma of the variety. The aromatic skins of the Alvarinho grapes, separated from the must by pressing at harvest, ferment for around 1 month in an environment without the presence of air (anaerobiosis). This fermentation transforms the existing residual sugar into alcohol, extracting the best aromas from the skins. Slow distillation in a traditional still helps to concentrate these aromas, giving rise to a very aromatic spirit characteristic of the Alvarinho grape variety. The alternation of aging in new and used oak casks over the years transmits a very particular aroma and flavor that gives this spirit a unique personality.
