Vinification of Beyra Riesling White Wine 2021: Manual harvesting with crushing of the entire bunch in order to preserve all the primary potential of the grapes. Fermentation in stainless steel vats, at a temperature between 16 - 17ºC for a period of around 20 days with indigenous yeasts. Aging with stirring of the lees – “batonnage” until bottling at the end of January 2019, followed by aging in the bottle for 14 months in the winery.
