Vinification of Dom Jose Ruby Port Wine: The Port Wines dedicated to the D. José Ruby batches begin fermentation in self-vinifiers with skin contact until fermentation is interrupted through the addition of wine brandy. Candidates for the batch then intern in oak vats for a maximum period of two years. Porto D. José was launched in 1930 as a tribute to D. José I, King of Portugal, and founder of Real Companhia Velha in 1756. This young Port brings together all the qualities of a Ruby Port, thus becoming a quality reference both in Portugal and Brazil.
