Vinification of Quinta do Cardo White Wine 2021: fresh grapes harvested by hand, in 12-20 kg boxes, are quickly transported to the winery where they are pressed, whole with stems, for around 4-5 hours with the aim of obtaining musts richer and with great freshness. Fermentation took place at a controlled temperature of 14°C for 4 weeks. After fermentation, the wine aged on the lees, with weekly battonage, until bottling.
