Vinification of Soalheiro Allo (Alô) White Wine: The grapes, exclusively from the Alvarinho and Loureiro varieties, are hand-picked in small capacity boxes. After pressing, the obtained must settles for 48 hours, followed by fermentation at controlled temperature, using pre-selected yeasts for the purpose.
