Quinta dos Carvalhais Colheita is a Dão red wine of exceptional quality, the ultimate exponent of elegance and richness. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with intensely delicate flavors and the unique personality of the region. The grapes were harvested by variety and plot, with a rigorous qualitative selection being carried out at the time. After soft stalking and pressing, the grapes go, by gravity, to small stainless steel vats with temperature control, where they are vinified, grape variety by variety. Alcoholic fermentation occurred for around 8 days, at an average temperature of around 27ºC, with the Touriga Nacional remaining in post-fermentative maceration for another 10 days. This wine was aged in used French oak barrels for a period of 12 months. The final blend was prepared based on the qualitative selection of numerous tastings and analyzes carried out during this period, which allowed the best wines to be chosen, grape variety by variety. The wine was subjected to a slight fining and filtration, before bottling and was bottled without cold stabilization treatment, which can cause the formation of deposits during its aging in the bottle.
