Vinification of Ribeiro Santo Red Wine 2021: The grapes were completely de-stemmed into small stainless steel tanks, where they macerated for 24 hours at low temperature, before starting alcoholic fermentation. Fermentation lasted around 15 days with controlled temperature and gentle pumping over for good extraction of color and aromas. After fermentation, it was transferred to a stainless steel tank, where it settled naturally until bottling.
