Vinification of Altano White Wine: After de-stemming and gently crushing the grapes, a brief maceration on the skin allows to optimize the extraction of desirable aromatic compounds and precursors. After clarification, the must is fermented in stainless steel vats. Aging: 3 months in stainless steel vats, with minimal contact with oxygen, in order to preserve all the aromatic freshness of the wine.
