Melgaço, the northernmost region of Portugal, is protected by a series of mountains that allow a perfect marriage between rainfall, temperature and the number of hours of sunshine necessary for the best maturation of the Alvarinho grapes. This climatic characteristic during maturation is often associated with the microclimate of Monção and Melgaço, which alternates hot days with cold nights, allowing the maintenance of fresh and fruity aromas with a present but moderate acidity, in keeping with the style we define for Soalheiro. Vinification of Vinho Verde Alvarinho Soalheiro 2019: The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short space of time. After pressing, the must obtained settles for 48 hours, followed by fermentation, at a controlled temperature, using yeasts pre-selected for this purpose. Bottling takes place after the wine has stabilized, followed by aging in the bottle. The vinification of Alvarinho Soalheiro is aimed at obtaining a wine that concentrates the quality of the grapes and allows a good evolution after bottling.
