Alto dos Amores – probably the most extraordinary landscape in Dão – has always been the meeting point for couples in love in Vila de Santar. If, in times past, the magic of this landscape served to win hearts, today, the grapes that grow there serve to conquer the most demanding tastes of wine lovers. It is this love story that serves, daily, as inspiration to all those who work to produce this Encruzado single variety from Casa de Santar. Vinification of Casa de Santar Vinha dos Amores Encruzado White Wine 2016: Crushing with total stemming, gentle pneumatic pressing, natural static clarification, alcoholic fermentation at 16°C in new French oak barrels. Aging: 12 months in new French Oak barrels, of which 3 months on fine lees – Batonnage. Followed by 6 months of bottle maturation.
