Vinification of Ervideira Invisível White Wine: From a selection of the best lots from Aragonez, and the result of a night harvest (moon harvest), this wine – Invisível – was born. The must is transported in a refrigerated truck to the winery. There, it is driven by gravity to the cold chamber, where it remains decanting for 24 hours at low temperatures. After this process, the must is inoculated with selected yeasts and fermentation takes place at a controlled temperature of 12º C for 15 days.
