Vinification of the Quinta das Bageiras Reserve Red Wine 2021: some of its Baga grapes provide old grapes, but in years when there is no wine cellar and there is a reserve, a retention of the grapes from the old grapes is destined for this wine. These grapes are fermented for 5 to 8 days in an open press without de-stemming (do not remove the berries from the bunch). Afterwards, it is reassembled with wooden masses, several times a day, until the correct intensity is reached. The wine then ends up fermenting in tons of old wood. While it rests, it is cleaned and aged in the same barrels for around 18 months. It is bottled without any fining or filtering. All these processes are done manually.
