Quinta dos Carvalhais Colheita Branco is a Dão white wine of exceptional quality, the ultimate exponent of elegance and richness. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with intensely delicate flavors and the unique personality of the region. Gouveio and Encruzado were harvested separately. The grapes were unloaded from 20 kg boxes directly into the de-stemmer-crusher. After pressing, the must was subjected to static decantation. It was then placed in stainless steel vats, where indigenous yeasts were added. Part of the 10% Encruzado must fermented in used French oak barrels, and the rest remained in the stainless steel tank. Gouveio fermented in a stainless steel tank. Fermentation took place at 18ºC, for a period of around 20 days. Of this wine, 10% of Encruzado fermented and aged for around 6 months in used 225L French oak barrels. The remaining part of the batch (90%) fermented and aged in stainless steel tanks. The marriage of barrel wine with vat wine contributed to achieving a greater balance in the final blend between the wine and the aromatic components typical of the wood.
