Quinta dos Carvalhais Encruzado is a Dão white varietal wine of exceptional quality, the ultimate exponent of the elegance and richness of the Encruzado grape variety. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with flavors of intense delicacy and unique personality. The Encruzado grapes arrived at the winery in 20 kg boxes, being unloaded directly into the pneumatic press. After pressing the whole grapes, the must was subjected to static decantation at low temperature for a period of 24 hours. It was then sent to a stainless steel tank where fermentation began. Halfway through fermentation, the wine was transferred to new French oak barrels, where fermented at temperatures that did not exceed 19ºC, for a period of around 20 days. Part of the wine fermented and aged for around 6 months in 225L new French oak barrels, from five different cooperages. During this period, the wine was subjected to frequent stirring operations of the fine lees, in order to increase the sensation of volume in the mouth and add aromas of wood to the primary aromas. The remaining part fermented and aged in a stainless steel tank, and contributed to achieving a greater balance in the final batch between the wine and the aromatic components.
