Quinta dos Carvalhais is the wine brand specialized in producing the best and tastiest Dão wines, constituting the biggest reference in the region - it represents the art, authenticity and quality of the best Dão wines. In this Quinta dos Carvalhais Reserva Branco, old habits of the region are restored regarding the aging of white wines, when it was common to store them for long periods in old oak barrels. The grapes were received at the winery in 20 kg boxes, being unloaded directly into the pneumatic press. The musts, duly protected from oxidation, were subjected to static decantation at low temperature for a period of 24 hours. They were then sent to temperature-controlled stainless steel tanks, where fermentation took place for around 20 days, at temperatures that did not exceed 16ºC. Aging for 16 months in used barrels (20% 500 liters; 80% 225 liters).
